Welcome back to another Meat-Free Monday’s!! This Meat-Free Monday is a delicious one with lots of recipes that you can try at home which are very quick and simple!!

(This idea came from the Co-Op food magazine so if you haven’t picked one up yet go down and grab one to see loads of tasty recipes!!)

Smoked Salmon Potato Skins:

This is very simple and easy and a delicious starter or party food!! All you’ll need for this is 3 (or however many you want to use) potatoes, creme fraiche, smoked salmon and capers. This is so simple with only a few steps to follow! All you need to do is rub the potatoes in a little olive oil and season and then bake for 45-50 minutes. Once cooked, spoon out the potato and mix with the creme fraiche, smoked salmon and capers and then spoon back into the potato! As simple as that you have a meat-free meal to enjoy!!

Roasted Cauliflower cheese and Squash Bake:

This is ready in 25 minutes with, again, a few simple steps!!! All you’ll need is cauliflower, butternut squash, oil, cumin seeds, paprika, cornflour, milk, and cheddar cheese (or any cheese that you like!!) For this meat-free meal all you need to do is arrange the cauliflower and butternut squash on a baking tray and drizzle some oil on the top and then toss in the cumin seeds, paprika and thyme leaves. Roast for 15 minutes, and then remove the cauliflower and continue to roast the butternut for a further 5 minutes. Meanwhile, put the cornflour in a small pan and whisk the milk. Heat for 5 minutes and continue to stir. Mix the cooked squash with the cauliflower and pour the sauce over the top and top with grated cheese and cook for a further 10 minutes!!

Mozzarella and Pesto Toasties:

For a lighter meal or lunchtime, these mozzarella and pesto toasties are completely meat-free and delicious! With this recipe the pesto is homemade, but you can always buy the pesto out of any supermarket if you would prefer to do it that way!All you will need for these toasties is: softened butter, crusty bread slices, mozzarella, oil for frying, 2 free-range eggs and some milk. For the pesto: large bunch of fresh basil leaves, parmesan, 3 glugs of olive oil and the juice of a lemon. So, to make the pesto all you need to do is mix all the pesto ingredients in a food processor and that is done! Then, butter each slice of bread on one side and then spread each slice with a thin layer of pesto and then top with mozzarella. Top with the remaining bread slices – butter side up. Whisk the eggs and carefully dip the sandwiches in the beaten egg, fry one sandwich at a time. Fry until golden and the cheese is melted! After, bake in the oven for 5 minutes or until the cheese is oozing out the bread! These are a delicious snack, or a lunch for those looking to avoid meat!!
